The yin foods, feminine, moist and tender refreshing, therefore, are legumes and fruits. The yang foods, male, fried, spicy or meat have a warming effect. A meal must therefore not only harmonize the taste, but also strike a balance between the cold and the heat. To compliment a dish, it is said that “it helps to pass the rice.” Another thing that characterizes traditional Chinese cuisine is the absence of dairy products because of lactose intolerance that exists in many Asian countries.
